Due to COVID-19, CSU’s Cottage Food Safety Training is being offered online.
This is a 3 1/2 to 4-hour food safety training that provides a 3-year certification and meets the food safety training requirement for Colorado Cottage Foods Act established and supported by the Colorado State Dept. of Health & Environment.
Participants learn food safety guidelines and the specifics for operating a small home-based cottage food business from a home kitchen. Learn about the most current Colorado Cottage Food Act and get a food safety certificate that applies no matter where you live in Colorado!!
The main sections of the training cover food safety guidelines for preparing foods in a home kitchen which is different from a food service site that would be inspected by the County and/or State Health Depts.
All of the participants that pass the test receive a laminated CSU Extension Cottage Food Safety certificate to post for customers to see. They are also added to a CSU Extension Cottage Food Producers listserve that now has over 3000 names on it as of 2019. Participants receive updates via emails and the answers to questions that are asked get shared with all list serve producers.

All classes will take place at the Gunnison County Fairgrounds.
ServSafe is a nationally recognized program developed by the National Restaurant Association as a comprehensive course on food safety. The Food Protection Manager course is ideal for retail food establishment managers who are not currently certified by an accredited food safety course. The Colorado Retail Food Establishment Rules and Regulations state that a Certified Food Protection Manager needs to be on hand and exerting active managerial control at all times. Participants of this course who score 75% or above on the exam become Certified Food Protection Managers, as required by the Colorado regulations. The course teaches participants to implement food safety practices, like controlling time and temperature, preventing cross-contamination, practicing personal hygiene, purchasing from reputable suppliers, and cleaning & sanitizing. It will also leave managers more prepared to implement policies to ensure their staff follow food safety practices at all times.
