2019 Food Preservation Series

Learn to preserve food safely at home!  

Canned good

Where: Gunnison County Fairgrounds

When: 5:30-8:30 PM

Cost:  $20/class or $70 for all four

Includes:  Research-based instruction, lab-tested recipes, and one canned/fermented product that participants will make during class.

 

July 31- Water Bath Canning
Learn to can high-acid foods such as fruit, salsa, pickles, tomatoes, jams, and jellies.

August 7- Pressure Canning
Learn to pressure can low-acid foods such as vegetables and meats.  Includes a free pressure canner dial gauge test ($10 value).  Bring your canner lid or just the dial gauge.

August 14- Pickling
Learn to make and safely water bath can pickles, relishes, salsa, and chutney.

August 21- Fermenting Vegetables:  Sauerkraut
Learn the science of preparing and storing sauerkraut and fermented vegetables safely.

ServSafe Food Protection Manager Certification

All classes will take place from 8:00 AM – 5:00 PM at the Gunnison County Fairgrounds.

ServSafe Food Protection Manager

ServSafe is a nationally recognized program developed by the National Restaurant Association as a comprehensive course on food safety.  The Food Protection Manager course is ideal for retail food establishment managers who are not currently certified by an accredited food safety course.  The Colorado Retail Food Establishment Rules and Regulations state that a Certified Food Protection Manager needs to be on hand and exerting active managerial control at all times.  Participants of this course who score 75% or above on the exam become Certified Food Protection Managers, as required by the Colorado regulations. The course teaches participants to implement food safety practices, like controlling time and temperature, preventing cross-contamination, practicing personal hygiene, purchasing from reputable suppliers, and cleaning & sanitizing.  It will also leave managers more prepared to implement policies to ensure their staff follow food safety practices at all times.

ServSafe Food Handler

ServSafe is a nationally recognized program developed by the National Restaurant Association as a comprehensive course on food safety. The ServSafe Food Handler training is ideal for those who work in the foodservice industry and want to improve their food safety practices.  This course is a great opportunity for professional development and provides Food Handler Certification.  Please note:  This course does NOT meet the requirements of the Colorado Retail Food Establishment Rules and Regulations to become a Certified Food Protection Manager.  This course teaches participants to implement food safety practices, like controlling time and temperature, preventing cross-contamination, practicing personal hygiene, purchasing from reputable suppliers, and cleaning & sanitizing, under the direction of a Certified Food Protection Manager.
